This April, Tasting the Tropics shines a spotlight on Tropical North Queensland’s dynamic food scene, celebrating the ingredients, producers and landscapes that shape it. From reef to rainforest, Tablelands to coast, it’s a celebration of flavour, provenance and place.

At Crystalbrook Bailey, we’re part of the story with two exclusive off-menu dishes across CC’s Bar & Grill and Pachamama, each showcasing local produce through bold, distinctive flavours.

Available from 7 April - 30 April 2026, this is your invitation to experience the region through flavour, story and locally sourced produce.

48-hour aji panca beef short rib $35

Grass-fed North Queensland beef is marinated for 48 hours in aji panca, garlic, cumin and Andean herbs, then slow-braised until tender and finished with a deeply reduced sauce from its cooking juices. A rich, layered dish that brings together local produce with vibrant, global influence.

At CC’s Bar & Grill, the focus is on fire, flavour and the Tablelands.

Dry-aged local pork tomahawk $48 (GF, DF)

Free-range North Queensland pork is dry-aged, char-grilled and finished with a smoked maple bourbon glaze. Paired with peaches grown in the cooler, elevated orchards of the Tablelands, this dish balances richness with subtle sweetness, celebrating the region’s depth of produce.
