Set next to a lush rainforest oasis, Forest celebrates sustainability working hand-in-hand with local farmers, growers and artisans. 

Contemporary, social, approachable and distinctly Australian, Forest, led by Executive Chef Etienne Karner, embraces the Northern Rivers region’s abundance of stunning ingredients.

Think poached Mooloolaba king prawns with avocado, green apple and coriander, Paroo kangaroo tartar with lemon myrtle mayo, line-caught local fish with Windaboo mushrooms or for the sweet tooth, a nest of Kataifi pastry with white chocolate and salted caramel parfait.

Passionately local, over 80% of Forest’s ingredients come from within a three-hour drive of the Resort. The environment also sits close to heart, with the restaurant using only sustainably sourced seafood and free-range proteins. Guaranteeing the highest levels of animal welfare, a selection of Forest’s wet and dry-aged beef is farmed at Crystalbrook Station*.

Throw in an organic herb garden, on-property beehives and a worm farm fit for a tv garden guru and you’ll start to get the idea.

Thirsty? For something with a bit of bite, try the Bam Bam with spiced rum, Campari and lemon myrtle or the Matcha Colada with Husk pure cane rum and homemade coconut matcha cream. Alternatively, peruse the heavenly international wine list, with options for every budget, as well as a selection of more than 30 sustainable, organic and biodynamic wines.

What better way to follow a morning of discovery and delight in Byron Bay than to decompress and relax on our breezy, shaded Verandah, cocktail in hand. With views of the glittering swimming pool and rainforest beyond, the Verandah is the perfect place to start – or end – your evening. In winter, the space warms on crisp coastal nights with outdoor heaters and cosy blankets. Sip on a Mactini – made with Brookie’s Mac liquer – or choose from a selection of both quirky and classic cocktails and a wine list curated by our very own Beverage Experience Manager. Serving a laid-back lunch and afternoon snacks, pull up a chair and christen it as your own.

We haven't had service like this before anywhere. The waitress and manager checked in regularly, and offered to split plates for us, was friendly and quick to give us exactly the order we asked for. Fantastic decor, the food was divine and creatively decorated. We had a few starters each with a unique rich flavour. The fish I ordered as a main was fresh, light and perfectly cooked. We tried all the desserts and fell in love with the strong flavours including strawberry and caramel. Even the pot of tea I ordered was perfectly made, and when I asked for extra milk, they had a slightly bigger milk jug specifically for my needs.

Exceptional restaurant

The restaurant, Forest is exceptional. Fantastic food and service staff. We would definitely recommend getting 'The Nest' for dessert, it was made up of Kataifi pastry, white chocolate and salted caramel parfait.

Delicious food

Staff were attentive without being intrusive, the setting is beautiful and tranquil. Food was delicious and perfectly cooked, particularly liked the prawns with avocado and apple.
