Passionately local, over 80% of Forest’s ingredients come from within a three-hour drive of the Resort. The environment also sits close to heart, with the restaurant using only sustainably sourced seafood and free-range proteins. We’re doing our bit to grow, consume and compost with our on-site herb gardens, four beehives and seven Subpods®.
Thirsty? The drinks list features playful, market-driven cocktails. Quintessentially Byron, sip on a Paradiso with Brookie’s Dry Gin, lemon myrtle syrup, garden mint and local passionfruit or try the totally insta-worthy (and slightly OTT) Fairy Dust Martini. Alternatively, peruse the heavenly international wine list with a selection of more than 30 sustainable, organic and biodynamic wines.

Jordan leads the culinary vision for Forest, the Verandah, Blue and all our events and conferences. His menus highlight the abundance of the Northern Rivers’ region – produce rooted from the soil of our local farmers, sustainably sourced seafood, native ingredients grown in the surrounding rainforests and along the dunes, and a focus on seasonal produce with a twist. Jordan continues to drive Forests’ sustainable and ever-evolving culinary journey.

Jordan’s accomplished career spans Vietnam, the Mediterranean, Sydney, and recently, Byron Bay.
We haven't had service like this before anywhere. The waitress and manager checked in regularly, and offered to split plates for us, was friendly and quick to give us exactly the order we asked for. Fantastic decor, the food was divine and creatively decorated. We had a few starters each with a unique rich flavour. The fish I ordered as a main was fresh, light and perfectly cooked. We tried all the desserts and fell in love with the strong flavours including strawberry and caramel. Even the pot of tea I ordered was perfectly made, and when I asked for extra milk, they had a slightly bigger milk jug specifically for my needs.Alby D, Google
