Forest Byron Bay is set overlooking a lush, tropical rainforest. The menu reflects our unique sense of place, with over 80% of our ingredients sourced within a three-hour drive. We believe that food is best enjoyed slowly and to share, with a bottle of locally sourced wine or vibrant cocktail in hand.   

Our small plates are perfect for unwinding after exploring Byron Bay or indulging in late-night cravings, while our larger dishes are perfect for sharing amongst friends, encouraging you to slow down and savour the locally sourced ingredients and creative cooking.  

With an on-site herb garden, four beehives, and seven Subpods®, Forest embraces the environment. The drinks list offers market-driven cocktails and a selection of more than 30 sustainable, organic and biodynamic wines.   

Meet Executive Chef Jordan Staniford

Jordan leads the culinary vision for Forest, the Verandah, Blue and all our events and conferences. His menus highlight the abundance of the Northern Rivers’ region – produce rooted from the soil of our local farmers, sustainably sourced seafood, native ingredients grown in the surrounding rainforests and along the dunes, and a focus on seasonal produce with a twist. Jordan continues to drive Forests’ sustainable and ever-evolving culinary journey.

Our food is designed to be social and approachable, uncomplicated and super tasty using the absolute best produce we can get our hands on,” says Jordan. “The flavours are fresh and playful.”

Jordan’s accomplished career spans Vietnam, the Mediterranean, Sydney, and recently, Byron Bay.

What a beautiful restaurant and amazing menu. The back drop is quite surreal and wonderful ambiance. Lovely to see a variety of local produce and exceptional flavours. It was hard to pick what to order as I wanted to try everything on the menu.
