Festival of Flavour, we're turning off the lights in Forest Byron Bay, so you can turn up your senses. 

In this intimate and unforgettable culinary journey, blindfolded guests will enjoy a tasting menu expertly designed to incorporate the four senses – sound, scent, taste, and touch. Set on our sprawling verandah, you'll be treated to an immersive rainforest experience.

Pop on your Slip Silk Eye Mask and sink into a truly one-of-a-kind event.

Creative, sustainable drinks will be paired to each dish.

  • To start

    • Sustainable caviar tasting experience
    • Forest focaccia with curry myrtle cultured butter

    • amuse bouche: tuna tataki with Australian natives

  • Entrée

    • Pork Cheek Raviolo served with mushroom consommé and fresh Australian truffles

  • Main

    • Coal roasted flame tail snapper with harissa rub, roasted over coals served with quinoa, sundried olives and roasted lemon

    • charred broccolini, chilli and garlic

    • Forest honey and spice heirloom carrots, beetroot borani

  • To finish

    • Chocolate and Davidson’s plum swirl ganache in layers of hazelnut dacquoise
