Festive food, sunshine and plenty of good times! You’re invited to join us at Crystalbrook Byron for a uniquely coastal Christmas in Byron Bay.

Relax, unwind and get in a beachy state of mind. Enjoy an indulgent, social, and distinctly festive buffet featuring the best local seafood and traditional Christmas fare.

  • Adults $265 includes welcome glass of bubbles

A selection of rye, seed and white sourdough with whipped brown butter and olive oil

From the ocean

  • Freshly shucked oysters, Ballina king prawns and Moreton Bay bugs with citrus and condiments
  • Hibiscus cured ocean trout with house pickles and sauce gribiche
  • Slipper lobster rolls with shaved fennel and rouille
  • Roasted sides of gold band snapper with escabeche and warrigal greens

In between

  • Roasted eggplant, cranberry pandanus dressing, coconut feta, finished with toasted buckwheat and seeds(V, GF)
  • Cauliflower, basil and roast walnut parcels with spiced coconut yoghurt (VG, N)
  • Wagyu Bresaola with grilled peach, witlof, native peach vinaigrette and rye crisps

To local farms

  • Bangalow Sweet Pork Ham glazed with our honey and native spice with Christmas chutney
  • Whole chicken terrine, with native fig and local macadamias
  • Slow roasted lamb shoulder with fennel caponata and green olive mint jus
  • Roast turkey breast ballotine with pistachio lemon stuffing and native pepper cranberry chutney
  • Roasting pan juice red wine gravy

And local produce

  • Asparagus, summer greens and ice plant salad with green goddess dressing
  • Kipfler potato salad, with capers, gherkin, carrot, summer peas and lemon myrtle aioli
  • Baby cos, pickled cucumber, mint, spring onion and roasted mandarin dressing
  • Classic roasted vegetables with heirloom carrots, Brussels sprouts, olive oil potatoes, slow roasted pumpkin and smoked sweet potato

To finish on a sweet note

  • Cherry and lychee pavlovas with burnt vanilla Chantilly
