From Wednesday 5th August to Sunday 30 August, discover the 'Pearl Diver': Fiume's limited-edition cocktail crafted with Never Never Oystershell Gin, Haku Vodka, dry vermouth and savoury brines, finished with a freshly shucked natural oyster perched on top.
Available for $27, the 'Pearl Diver' can be ordered at the bar, through our waitstaff or via QR code while you soak up Brisbane's best rooftop views.
Want to dive a little deeper? Pair your cocktail with freshly shucked oysters for the ultimate rooftop indulgence. We’ve partnered with OzFish to ensure every shell served goes back into the sea, helping to restore our reefs in Moreton Bay and create healthier marine ecosystems.

About OzFish
We’re proud to donate used oyster shells from Fiume (and the wider Howard Smith Wharves precinct) to OzFish’s Shellfish Recycling Centre in Moreton Bay, the largest community-driven shellfish reef restoration project in Australia.
Here, shells are sterilised for up to four months before returning to the bay, where they become habitat for marine life. Each shell can support up to 10 baby oysters, helping regenerate reef systems that naturally filter water and support biodiversity.
