Enjoy a Taste of the Tropics
This April, we're celebrating Tasting the Tropics, a new showcase of Tropical North Queensland’s vibrant food scene. Bringing together growers, producers and chefs, it shines a light on the region’s extraordinary ingredients, from reef to rainforest, Tablelands to coast.
At Crystalbrook Riley, we’re proud to be part of this first chapter, presenting three exclusive off-menu dishes across our signature venues, Calypso Club, Paper Crane and Rocco. Each dish tells a story of place, season and provenance, showcasing the local ingredients that define our region.
Available for April only, this is your invitation to experience the region through flavour, story and locally sourced produce.
At Calypso Club, the ocean takes centre stage.
Cured salmon and prawn cake $36
Locally caught Coral Sea prawns are paired with bright Atherton Tablelands citrus in a delicate panko-crumbed cake, finished with caramelised heirloom beetroot from the Tablelands and vibrant pickled vegetables. It’s a dish that captures the freshness and colour of the coast and hinterland in every bite.
At Paper Crane, the journey continues with a Tropical North Queensland interpretation of a classic.
Duck khao soi $38
Free-range Mareeba duck is layered into a fragrant, house-made red curry with crispy egg noodles, sweet local pineapple, and heirloom tomatoes sourced from Rusty’s Markets growers. Fresh curry leaves grown in the Atherton Tablelands bring depth and aroma, creating a dish that is both comforting and distinctly local.
At Rocco, the spotlight turns to the Tablelands.
Slow roasted goat shoulder cigarillo (2 pieces) $22
Regeneratively farmed goat is slow roasted until tender, then wrapped into a crisp cigarillo and paired with caramelised yoghurt, saffron and muscatel agrodolce. Finished with salted Queensland macadamias from boutique growers near Tolga and Malanda, it’s a dish that speaks to craftsmanship, sustainability and bold flavour.
