This April, Tasting the Tropics brings fresh energy to Tropical North Queensland’s food scene, celebrating the flavours, people and places that make this region so special. From reef to rainforest, Tablelands to coast, it’s all about local ingredients and the stories behind them.

At Crystalbrook Flynn, we’re joining the celebration with an exclusive off-menu dish at Flynn’s Italian, showcasing the best of the region in a way that’s vibrant and full of flavour.

Available for April only, this is your invitation to experience Tropical North Queensland through food.


At Flynn's Italian, the reef takes centre stage

Pan-roasted Coral Trout ($48, GF).

Fresh Coral Trout, sustainably harvested off the Cairns coastline, is pan-roasted and served with a Lyonnaise-style tomato and caper sauce. Made with Mount Molloy tomatoes, locally cured Kalamata olives and hand-cut parsley from boutique growers in Kuranda, this dish celebrates the region’s produce in its purest form.
