To start

  • Sydney rock oysters with apple and honey vinegar mignonette, roast seaweed 
  • Grilled kangaroo macadamia satay skewer with pickled red grapes, saltbush, and roti 

The main event:

Roast Etty Bay barramundi with braised sugarloaf cabbage and sea urchin hollandaise, crispy green kale  

or 

Roast Muscovy duck breast with radicchio pure and beetroot ribbon, rosella, and sweet red vermouth jus 

To finish: 

Avocado and lime parfait with papaya tartare, coconut mousse, and pomegranate
