We welcome the quiet richness of winter with an evening designed for slow enjoyment and deep flavour. 

This five-course dining experience celebrates the season’s most coveted ingredient, the truffle, in a menu that is both playful and refined. 

Each dish is a warm invitation. Slipper lobster with truffle caviar. Duck in a fragrant bouillon with confit leg and sausage. Pressed mushroom terrine with black garlic. Dessert brings a touch of playful delight with Dig Your Own Truffle, a dark chocolate shell filled with burnt honey ice cream and roasted macadamia praline, hidden beneath a layer of edible soil. 

Your experience includes: 

  • Snacks (truffled venison and its antler, truffle chawanmushi with wild mushrooms, slipper lobster with winter citrus and truffle caviar) 
  • Pressed Lion’s Mane mushroom and truffle terrine with artichoke crisps and black garlic emulsion 
  • Duck with confit leg, sausage and breast, served in a truffle bouillon with a mosaic of potato 
  • Nimbin Nashua washed rind with fresh shaved truffle, quince and oak leaf crackers 
  • Dig Your Own Truffle: dark chocolate shell filled with burnt honey truffle ice cream and roasted macadamia praline, buried in edible soil

Due to the set menu and nature of this collaborative event, we are unable to accommodate dietary requirements or menu modifications. Cancellations must be made at least 24 hours in advance. Bookings cancelled within 24 hours or no-shows will be charged in full per person. Crystalbrook Crowd discount not applicable. We’re cash-free. Please note Forest restaurant does not accept cash. Debit cards and all major credit cards are welcome. 1% surcharge applies on credit cards. 15% public holiday surcharge also applies.
