Forest x Highwayman Whisky Menu

This September, Forest Byron Bay invites you to explore a month-long collaboration with Highwayman Whisky, crafted locally by renowned whisky maker Dan Woolley. Each small batch, cask strength single malt is made in Byron Bay from grain to glass, using a variety of oak casks to create distinctive character and complexity. 

Launching over Father’s Day weekend, our bespoke tasting menu pairs seasonal, sustainably sourced dishes with four unique Highwayman whiskies. From the bright coastal influence of lightly peated drams to the richness of muscat cask maturation, each course is a journey through flavour, place and craft.

Enjoy a gift to take home of HWM barrel-aged honey and a bespoke blended 50ml whisky with every whisky flight ordered.    

Local king prawns (GF) 

lilliput capers, lemon, green olive, pickled green chillis, and brown butter 

Grilled octopus and Bangalow sausage skewer (GF, DF) 

fennel, grapes and black garlic emulsion 

Paired with Highwayman ‘Tokyo Nights’ lightly peated whisky aged in Fino sherry, Apera and Bourbon barrels 

Braised lamb shoulder 

smoked fregola, braised dark leaves, green olive jus 

Paired with Highwayman ‘Geoffrey’s drop’ muscat cask matured whisky 

Slow roasted wagyu tri-tip (GF) 

heirloom carrot, mosaic of potato and native pepper jus 

Paired with Highwayman ‘Dark Horse’ peated HWM whisky matured in bourbon barrels

Chocolate mousse dome (V) 

liquid whisky caramel centre, stout ice cream and cocoa nib crisp (V) 

Paired with Highwayman ‘The Darkside Strikes back’ lightly peated whisky aged in Pedro Ximinez sherry casks
